Ingredients

  • 2 c. rice, uncooked
  • 1/4 c. vegetable oil
  • 2 c. water
  • 4 slices bacon, fried crisp
  • 1/2 c. onion, minced
  • 1/2 c. celery, minced
  • 1/2 c. bell peppers, minced
  • 1 can tomatoes, mashed

Method

  • Fry the bacon in a large pot or Dutch oven until crisp.
  • Add oil and saute onion, celery and bell peppers until tender. To this, add the tomatoes with the liquid and 2 cups water. Cook at a rolling boil for 20 minutes. Add rice to the pot and stir well. When mixture returns to a boil, reduce heat to low. Cover and cook for 30 minutes or until rice is fluffy. Serves 6 to 8.
