- 8 ounces elbow macaroni
- 1 tablespoon olive oil
- 1 medium onion, sliced
- 8 ounces shredded cheddar cheese
- 16 ounces cottage cheese
- 10 ounces frozen chopped spinach, thawed and drained
- 1/4 cup breadcrumbs
- salt
- pepper
- dried basil
- dried dill weed
Method
- Preheat oven to 350 degrees.
- Boil macaroni until al dente
- Cook the onion in oil until it is carmalized.
- In a bowl, combine cheeses, spinach, onion, seasonings, and macaroni.
- Spread mixture into a 13x9 pan.
- Top with breadcrumbs, or cracker crumbs.
- Bake for 30-35 minutes.
