Ingredients

  • 8 ounces elbow macaroni
  • 1 tablespoon olive oil
  • 1 medium onion, sliced
  • 8 ounces shredded cheddar cheese
  • 16 ounces cottage cheese
  • 10 ounces frozen chopped spinach, thawed and drained
  • 1/4 cup breadcrumbs
  • salt
  • pepper
  • dried basil
  • dried dill weed

Method

  • Preheat oven to 350 degrees.
  • Boil macaroni until al dente
  • Cook the onion in oil until it is carmalized.
  • In a bowl, combine cheeses, spinach, onion, seasonings, and macaroni.
  • Spread mixture into a 13x9 pan.
  • Top with breadcrumbs, or cracker crumbs.
  • Bake for 30-35 minutes.
