Ingredients

  • 1 (14-oz.) sheet frozen puff pastry, thawed
  • 1/4 c. Country Crock Original
  • 2 large onions, thinly sliced into half moons
  • 2 tbsp. brown sugar
  • kosher salt
  • Freshly ground black pepper
  • 8 oz. goat cheese, crumbled
  • 10 fresh thyme sprigs

Method

  • Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
  • On a floured surface, roll out puff pastry to a 9-by-13" rectangle.
  • Transfer puff pastry to prepared baking sheet and prick all over with a fork.
  • Bake until golden brown, 15 minutes.
  • Let cool slightly.
  • Meanwhile, in a large pot, warm Country Crock Original over medium-high heat.
  • Add onions and cook until golden, 10 minutes.
  • Add brown sugar and cook 5 minutes more.
  • Season with salt and pepper.
  • Spread caramelized onions over puff pastry, leaving a 1/2" board around the edges.
  • Sprinkle with goat cheese and scatter thyme sprigs on top.
  • Bake until puff pastry is golden brown and crisp and cheese is warm and melty, about 10 minutes.
  • Let cool slightly, then cut into squares and serve.
