Ingredients

  • 2 cups Jack Daniels (black) bourbon
  • 1 cup finely chopped sweet onion
  • 1/2 cup finely chopped roasted red sweet pepper
  • 2 heads roasted garlic, smashed
  • 2 tbsp coarsely ground black pepper
  • 3 tbsp Worcestershire sauce
  • 2 cups ketchup
  • 1 cup hoisin sauce
  • 2 tbsp Tabasco sauce (or to taste if you like it hotter)

Method

  • Set aside the two cups of bourbon.
  • Mix all remaining ingredients in a deep pan.
  • Turn on the heat to a low simmer and very carefully (don't spill any) stir in one cup of the bourbon.
  • Add ice to the second cup of bourbon and sip while occasionally stirring the sauce.
  • Simmer for 1 hour, replenishing the sipping liquid as required.
