- 2 cups Jack Daniels (black) bourbon
- 1 cup finely chopped sweet onion
- 1/2 cup finely chopped roasted red sweet pepper
- 2 heads roasted garlic, smashed
- 2 tbsp coarsely ground black pepper
- 3 tbsp Worcestershire sauce
- 2 cups ketchup
- 1 cup hoisin sauce
- 2 tbsp Tabasco sauce (or to taste if you like it hotter)
Method
- Set aside the two cups of bourbon.
- Mix all remaining ingredients in a deep pan.
- Turn on the heat to a low simmer and very carefully (don't spill any) stir in one cup of the bourbon.
- Add ice to the second cup of bourbon and sip while occasionally stirring the sauce.
- Simmer for 1 hour, replenishing the sipping liquid as required.
