Ingredients

  • 10 to 12 large cucumbers
  • 2 lb. onion
  • 3 c. celery
  • 2 hot peppers
  • 2 sweet peppers
  • 6 c. water
  • 1/4 c. salt
  • 1 tsp. celery seed
  • 2 c. sugar
  • 2 Tbsp. mustard seed
  • 1 tsp. turmeric
  • 4 c. white vinegar

Method

  • Slice unpeeled cucumbers and dice other vegetables.
  • Place in large canning pot and cover with salt and water.
  • Soak 12 hours. When time has passed, heat vinegar, sugar and spices.
  • Drain water off vegetables and add hot vinegar mixture.
  • Bring to a boil, approximately 10 minutes or until mixture is well heated. Transfer to hot canning jars and seal with hot disks and rings.
