Ingredients
- 1 1/2 c. washed, torn mixed salad greens (per serving)
- raspberry vinaigrette
- canned hearts of palm, cut in 1/2 to make shorter "candles"
- pinenuts
- sun-dried tomatoes, reconstituted in boiling water several minutes and chopped
- sweet red pepper, cut into candle-flame shapes
Method
- Toss greens with desired amount of vinaigrette.
- Arrange greens on salad plates.
- Place 1/2 heart of palm in center of each plate.
- Make a small slit in top of "candle"
- and insert a "flame."
- Sprinkle greenery "wreath" with sun-dried tomatoes and pine nuts.
