Ingredients

  • 1 1/2 c. washed, torn mixed salad greens (per serving)
  • raspberry vinaigrette
  • canned hearts of palm, cut in 1/2 to make shorter "candles"
  • pinenuts
  • sun-dried tomatoes, reconstituted in boiling water several minutes and chopped
  • sweet red pepper, cut into candle-flame shapes

Method

  • Toss greens with desired amount of vinaigrette.
  • Arrange greens on salad plates.
  • Place 1/2 heart of palm in center of each plate.
  • Make a small slit in top of "candle"
  • and insert a "flame."
  • Sprinkle greenery "wreath" with sun-dried tomatoes and pine nuts.
