Ingredients
- your choice fish fillets
- yellow cornmeal
- pinch of salt
- 1 tsp. red pepper
- grease or oil
Method
- Mix yellow cornmeal, salt and red pepper.
- Roll fish in cornmeal mixture.
- Heat 4 to 6 inches of oil.
- Using caution, test oil or grease by dropping a match in pan.
- If it ignites, it's ready.
- Fry fish until it rises to surface.
- Flip and wait until golden brown.
