Ingredients

  • 1/2 lb. sausage or bacon
  • 4 or 5 c. cold cooked rice
  • 1/2 c. oil or bacon grease
  • 1 medium onion, chopped
  • salt and pepper to taste
  • 2 large eggs
  • 3/4 c. chopped green onions
  • bell pepper (optional)
  • celery, garlic and parsley (optional)

Method

  • Fry sausage in oil until lightly brown.
  • Add chopped onion; saute.
  • Add rice and other ingredients except eggs and fry until crisp.
  • Stir constantly.
  • Add eggs and stir until eggs are cooked. Serve as main dish.
  • Nothing else is needed to go with this except children like catsup on it.
