Ingredients
- 1/2 lb. sausage or bacon
- 4 or 5 c. cold cooked rice
- 1/2 c. oil or bacon grease
- 1 medium onion, chopped
- salt and pepper to taste
- 2 large eggs
- 3/4 c. chopped green onions
- bell pepper (optional)
- celery, garlic and parsley (optional)
Method
- Fry sausage in oil until lightly brown.
- Add chopped onion; saute.
- Add rice and other ingredients except eggs and fry until crisp.
- Stir constantly.
- Add eggs and stir until eggs are cooked. Serve as main dish.
- Nothing else is needed to go with this except children like catsup on it.
