Ingredients
- 6 slices white bread
- 1/2 c. softened butter
- 2 eggs
- 1/3 c. olive oil
- 2 to 3 Tbsp. lemon juice
- 1/2 c. Parmesan cheese
- 1 Tbsp. prepared mustard
- 1 1/2 cloves garlic
- pepper
- 3 qt. torn, crisp and dry romaine leaves
Method
- Remove crusts from bread and spread butter lightly on each side.
- Place
- in large skillet over moderate heat. Add a little of the
- remaining butter.
- Brown bread on each side, drain on paper
- towels
- and cube.
- Beat
- eggs slightly.
- Add olive oil, lemon juice, Parmesan cheese, mustard, pepper and garlic. Beat until
- blended.
- Toss
- romaine,
- dressing
- and croutons.
