Ingredients

  • 6 slices white bread
  • 1/2 c. softened butter
  • 2 eggs
  • 1/3 c. olive oil
  • 2 to 3 Tbsp. lemon juice
  • 1/2 c. Parmesan cheese
  • 1 Tbsp. prepared mustard
  • 1 1/2 cloves garlic
  • pepper
  • 3 qt. torn, crisp and dry romaine leaves

Method

  • Remove crusts from bread and spread butter lightly on each side.
  • Place
  • in large skillet over moderate heat. Add a little of the
  • remaining butter.
  • Brown bread on each side, drain on paper
  • towels
  • and cube.
  • Beat
  • eggs slightly.
  • Add olive oil, lemon juice, Parmesan cheese, mustard, pepper and garlic. Beat until
  • blended.
  • Toss
  • romaine,
  • dressing
  • and croutons.
