Ingredients

  • 1 Tbsp. Dijon mustard
  • 3 large cloves garlic, minced
  • 1 egg yolk (optional)
  • 1/4 c. red wine vinegar
  • salt and pepper
  • 1 c. light olive oil
  • 2 heads romaine lettuce, cleaned and torn into bite-sized pieces
  • 1/2 to 1 c. Parmesan cheese
  • 1 box croutons (Caesar salad flavor if available)

Method

  • Mix mustard and garlic.
  • Add egg, vinegar, salt and pepper; mix well.
  • Slowly add olive oil and again mix well.
  • Pour mixture over romaine lettuce and toss.
  • Add Parmesan cheese and croutons and toss again.
  • Serve.
