- 1 Tbsp. Dijon mustard
- 3 large cloves garlic, minced
- 1 egg yolk (optional)
- 1/4 c. red wine vinegar
- salt and pepper
- 1 c. light olive oil
- 2 heads romaine lettuce, cleaned and torn into bite-sized pieces
- 1/2 to 1 c. Parmesan cheese
- 1 box croutons (Caesar salad flavor if available)
Method
- Mix mustard and garlic.
- Add egg, vinegar, salt and pepper; mix well.
- Slowly add olive oil and again mix well.
- Pour mixture over romaine lettuce and toss.
- Add Parmesan cheese and croutons and toss again.
- Serve.
