Ingredients

  • 2 c. flour
  • 1/4 c. sugar
  • 1 tsp. baking powder
  • 1/2 tsp. soda
  • 1 tsp. nutmeg or mace
  • 1 tsp. salt
  • 3/4 c. buttermilk or 3/4 Tbsp. vinegar in sweet milk to make the 3/4 c. measurement
  • 1/4 c. cooking oil
  • 1 egg

Method

  • Combine the dry ingredients.
  • Stir in buttermilk, oil and egg. Beat all ingredients until smooth.
  • A mixer is not necessary for this.
  • A fork will do.
  • Drop with teaspoon (too large puffs will not cook through) into hot fat (375°).
  • Fry until golden brown, about 3 minutes.
  • Drain.
  • Roll warm puffs in granulated or powdered sugar.
  • Makes 2 1/2 dozen.
