Ingredients
- 2 c. flour
- 1/4 c. sugar
- 1 tsp. baking powder
- 1/2 tsp. soda
- 1 tsp. nutmeg or mace
- 1 tsp. salt
- 3/4 c. buttermilk or 3/4 Tbsp. vinegar in sweet milk to make the 3/4 c. measurement
- 1/4 c. cooking oil
- 1 egg
Method
- Combine the dry ingredients.
- Stir in buttermilk, oil and egg. Beat all ingredients until smooth.
- A mixer is not necessary for this.
- A fork will do.
- Drop with teaspoon (too large puffs will not cook through) into hot fat (375°).
- Fry until golden brown, about 3 minutes.
- Drain.
- Roll warm puffs in granulated or powdered sugar.
- Makes 2 1/2 dozen.
