Ingredients

  • 2 c. Buttermilk
  • 1 1/2 tsp Unflavored gelatin
  • 2/3 c. Heavy cream
  • 3/4 c. Sugar
  • 1 pt Strawberries -- hulled and Quartered

Method

  • In top of a double boiler (not over heat), sprinkle gelatin over 1 c. buttermilk; let stand to soften, about 5 min.
  • Meanwhile, bring cream and scant 1/2 c. sugar to a boil.
  • Add in to gelatin mix; place over simmering water; whisk till gelatin dissolves, 5 min.
  • Stir in remaining c. buttermilk.
  • Pass mix through a cheesecloth-lined strainer.
  • Divide among six 4-oz ramekins or possibly small bowls on a baking sheet.
  • Cover; chill till set, 4 hrs.
  • Meanwhile, sprinkle strawberries with remaining sugar, Let stand for about 1 hour.
  • Unmold by dipping ramekins briefly into warm water and running tip of knife around edges; invert onto plates and serve with strawberries and their juice.
