Ingredients
- 2 c. Buttermilk
- 1 1/2 tsp Unflavored gelatin
- 2/3 c. Heavy cream
- 3/4 c. Sugar
- 1 pt Strawberries -- hulled and Quartered
Method
- In top of a double boiler (not over heat), sprinkle gelatin over 1 c. buttermilk; let stand to soften, about 5 min.
- Meanwhile, bring cream and scant 1/2 c. sugar to a boil.
- Add in to gelatin mix; place over simmering water; whisk till gelatin dissolves, 5 min.
- Stir in remaining c. buttermilk.
- Pass mix through a cheesecloth-lined strainer.
- Divide among six 4-oz ramekins or possibly small bowls on a baking sheet.
- Cover; chill till set, 4 hrs.
- Meanwhile, sprinkle strawberries with remaining sugar, Let stand for about 1 hour.
- Unmold by dipping ramekins briefly into warm water and running tip of knife around edges; invert onto plates and serve with strawberries and their juice.
