Ingredients

  • 1 c. unbleached white flour
  • 1 c. corn meal
  • 1/2 c. sugar
  • 1/2 c. cornstarch
  • 1 Tbsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 egg
  • 1/4 c. butter, melted
  • 1 1/2 c. buttermilk

Method

  • Combine flour, corn meal, sugar, cornstarch, baking powder, baking soda and salt in large bowl.
  • Beat egg in smaller bowl and whisk in butter slowly until well mixed.
  • Whisk in buttermilk. Pour egg mixture into dry ingredients, mixing until just blended. Gently spoon into greased 9 x 5-inch loaf pan.
  • Bake at 375° for 45 minutes or until wooden pick inserted in center of loaf comes out clean.
  • Makes 1 loaf.
