Ingredients
- 2 c. sifted cake flour
- 3/4 tsp. soda
- 1/2 tsp. salt
- 2/3 c. butter
- 1 c. sugar
- 3 eggs, separated
- 1 tsp. vanilla
- 1/2 tsp. lemon extract
- 1/2 c. buttermilk
- 2 Tbsp. distilled vinegar
Method
- Sift flour, soda and salt together.
- Cream butter and sugar until light and fluffy.
- Add egg yolks and beat until very light. Add vanilla and lemon extract, blending well.
- Add dry ingredients alternately with combined buttermilk and vinegar.
- Beat until batter is smooth.
- Fold in stiffly beaten egg whites.
- Pour into 2 greased 8-inch cake pans.
- Bake at 375° for 25 to 30 minutes.
