Ingredients

  • 2 c. sifted cake flour
  • 3/4 tsp. soda
  • 1/2 tsp. salt
  • 2/3 c. butter
  • 1 c. sugar
  • 3 eggs, separated
  • 1 tsp. vanilla
  • 1/2 tsp. lemon extract
  • 1/2 c. buttermilk
  • 2 Tbsp. distilled vinegar

Method

  • Sift flour, soda and salt together.
  • Cream butter and sugar until light and fluffy.
  • Add egg yolks and beat until very light. Add vanilla and lemon extract, blending well.
  • Add dry ingredients alternately with combined buttermilk and vinegar.
  • Beat until batter is smooth.
  • Fold in stiffly beaten egg whites.
  • Pour into 2 greased 8-inch cake pans.
  • Bake at 375° for 25 to 30 minutes.
