Ingredients
- 3/4 c. butter, softened
- 3 Tbsp. sugar
- 1 1/2 c. sifted flour
- 2 c. light brown sugar
- 3 eggs, separated
- 1 c. nuts (chopped)
- 3/4 c. coconut
Method
- Cream butter and sugar; blend in flour.
- Pat into bottom of a well-greased 13 x 9 x 2-inch pan.
- Bake at 350° for 15 minutes.
- In a bowl, beat egg whites until stiff and set aside.
- Beat egg yolks until thick; add brown sugar and beat well.
- Stir in nuts and coconut; fold in egg whites and spread over baked crust.
- Return to oven and bake 25 or 30 minutes longer.
- Remove from oven, cool in pan, dust with confectioners sugar.
