Ingredients

  • 3/4 c. butter, softened
  • 3 Tbsp. sugar
  • 1 1/2 c. sifted flour
  • 2 c. light brown sugar
  • 3 eggs, separated
  • 1 c. nuts (chopped)
  • 3/4 c. coconut

Method

  • Cream butter and sugar; blend in flour.
  • Pat into bottom of a well-greased 13 x 9 x 2-inch pan.
  • Bake at 350° for 15 minutes.
  • In a bowl, beat egg whites until stiff and set aside.
  • Beat egg yolks until thick; add brown sugar and beat well.
  • Stir in nuts and coconut; fold in egg whites and spread over baked crust.
  • Return to oven and bake 25 or 30 minutes longer.
  • Remove from oven, cool in pan, dust with confectioners sugar.
