Ingredients

  • 4 large tomatoes, cut into 1/4-in slices
  • 12 oz fresh buffalo mozzarella cheese, cut into 1/4 in-slices
  • 12-16 fresh basil leaves
  • 2 tbsp balsamic vinegar
  • 1/4 cup basil pesto, fresh or jarred
  • 4 pieces of ciabatta bread, grilled until slightly brown
  • Olive oil for brushing

Method

  • Layer alternating slices of tomatoes and mozzarella, adding a basil leaf between each, on a large, shallow platter. Drizzle the salad with balsamic vinegar and basil pesto. Brush hot, grilled ciabatta with olive oil. Place on platter and serve immediately.
