Ingredients

  • 1 cup Buckwheat
  • 3-4 pieces scallions
  • 1 tablespoon pepper paste
  • 1 tablespoon tomato paste
  • 2 tablespoons pomegranate molasses
  • 1 lemon juice + zest
  • 1/2 cup EVOO
  • 1 cucumber
  • 1/2 bunch parsley
  • 1/2 bunch fresh mint
  • 1 green pepper
  • 1 red pepper
  • salt&pepper

Method

  • Soak buckwheat in water for an hour. Then boil the seeds until they are soft. Strain excess water, add pepper and tomato paste and mix well and let it cool.
  • Clean and wash the greens and finely chop them. Mix everything together and place the salad in a large serving dish.
