Ingredients

  • 4 c. cubed, cooked chicken breasts
  • 1 (1 lb.) pkg. pasta, cooked, rinsed and cooled
  • 1/4 to 1/3 c. olive oil
  • 5 Tbsp. mayonnaise
  • 2 small cans (or 1 large) sliced black olives, or green olives
  • 1 bunch green onions, chopped fine
  • 3 garlic cloves, minced or chopped fine
  • 1/2 c. chopped red pepper or pimiento
  • 1/4 c. chopped parsley
  • 1 tsp. each fresh oregano, basil, dill or 1/2 tsp. dried

Method

  • Mix all ingredients.
  • Garnish with diced fresh tomatoes (optional).
