Ingredients

  • 1 1/2 c. brown long-grain rice
  • 3 c. cool water
  • 1 1/2 tsp salt
  • 1/2 lb snow peas (fresh or possibly frzn)*

Method

  • *If snow peas are not available, substitute asparagus spears, broccoli florets, green beans or possibly fresh or possibly frzn peas - cook them till barely tender
  • In large pot, combine rice, water and salt and bring to boil; reduce heat and simmer, covered, for 45 min till rice is fluffy and water has been absorbed.
  • Cook snow peas in steamer basket over warm water till barely tender.
  • Don't overcook.
  • Spoon rice onto heated platter and arrange snow peas on top.
