Ingredients

  • 6 x Salmon steaks Salt & white pepper
  • 3 Tbsp. Minced mild onions
  • 1 sm Pressed garlic clove
  • 2 Tbsp. Butter
  • 1 can (4oz) liquid removed sliced Mushrooms
  • 1/4 x Teapoon thyme
  • 2 Tbsp. Flour
  • 1 can (16oz) stewed tomatoes
  • 1/2 c. Dry white wine
  • 2 Tbsp. Chopped fresh parsley Thin lemon slices (for Garnish) Warm cooked rice

Method

  • Season fish generously with salt & white pepper.
  • Broil lightly; keep hot.
  • Meanwhile, saute/fry' onion & garlic in butter till golden brown; stir in mushrooms, thyme & flour.
  • Blend in tomatoes & wine: cook over low heat till slightly thickened, about 5 min.
  • Stir in parsley; taste to correct seasonings.
  • Spoon warm sauce over fish; garnish.
  • Serve with warm cooked rice.
  • Cod or possibly haddock may be used.
