Ingredients
- 6 x Salmon steaks Salt & white pepper
- 3 Tbsp. Minced mild onions
- 1 sm Pressed garlic clove
- 2 Tbsp. Butter
- 1 can (4oz) liquid removed sliced Mushrooms
- 1/4 x Teapoon thyme
- 2 Tbsp. Flour
- 1 can (16oz) stewed tomatoes
- 1/2 c. Dry white wine
- 2 Tbsp. Chopped fresh parsley Thin lemon slices (for Garnish) Warm cooked rice
Method
- Season fish generously with salt & white pepper.
- Broil lightly; keep hot.
- Meanwhile, saute/fry' onion & garlic in butter till golden brown; stir in mushrooms, thyme & flour.
- Blend in tomatoes & wine: cook over low heat till slightly thickened, about 5 min.
- Stir in parsley; taste to correct seasonings.
- Spoon warm sauce over fish; garnish.
- Serve with warm cooked rice.
- Cod or possibly haddock may be used.
