Ingredients

  • 1 1/2 lb. fish steaks
  • 2 Tbsp. oil
  • 1/3 c. tarragon vinegar
  • 1 tsp. Worcestershire sauce
  • freshly ground black pepper
  • 1 bay leaf
  • 2 Tbsp. chopped parsley

Method

  • In a shallow pan, combine oil, vinegar, Worcestershire sauce, pepper, bay leaf and parsley.
  • Add fish steaks; cover and refrigerate for at least 3 hours, turning occasionally so that the steaks are well coated.
  • Remove from marinade.
  • Place on a foil covered broiler pan.
  • Baste with marinade.
  • Place broiler pan about 3 inches from heat.
  • Broil about 10 minutes or until fish flakes easily when tested with a fork.
  • Baste with sauce.
  • Yield: 6 servings.
