Ingredients
- 1 1/2 lb. fish steaks
- 2 Tbsp. oil
- 1/3 c. tarragon vinegar
- 1 tsp. Worcestershire sauce
- freshly ground black pepper
- 1 bay leaf
- 2 Tbsp. chopped parsley
Method
- In a shallow pan, combine oil, vinegar, Worcestershire sauce, pepper, bay leaf and parsley.
- Add fish steaks; cover and refrigerate for at least 3 hours, turning occasionally so that the steaks are well coated.
- Remove from marinade.
- Place on a foil covered broiler pan.
- Baste with marinade.
- Place broiler pan about 3 inches from heat.
- Broil about 10 minutes or until fish flakes easily when tested with a fork.
- Baste with sauce.
- Yield: 6 servings.
