Ingredients

  • 1/2 c. chopped onion
  • 6 Tbsp. butter
  • 2 Tbsp. flour
  • 3 eggs, well beaten
  • 1/2 c. water
  • 1 (8 oz.) pkg. Velveeta cheese
  • 2 pkg. chopped broccoli, thawed and drained
  • 1/4 c. crushed crackers (in large pieces)

Method

  • Saute onion in butter until soft.
  • Stir in flour and water. Cook over low heat until thickened.
  • Blend in shredded Velveeta. Combine sauce and broccoli.
  • Add eggs; mix gently until blended. Put in casserole and top with cracker crumbs.
  • Bake at 325° for 30 minutes.
