Ingredients

  • 1 1/2 c. water
  • 1/2 c. chopped onion
  • 3 c. chopped broccoli
  • 1 tsp. salt
  • 1 c. shredded American cheese
  • 2 c. milk
  • 2 Tbsp. butter

Method

  • Boil broccoli and onion in water until tender.
  • Add cheese and salt.
  • After cheese melts, add milk and stir.
  • Place in blender and process on medium until blended.
  • Heat to boiling.
  • If thicker soup is desired, mix 1/3 cup flour and 1/2 cup water.
  • Stir into soup.
  • Cook and stir until soup is the consistency of heavy cream.
