Ingredients
- 1 medium head broccoli or cauliflower (fresh or frozen)
- 3 c. cold water
- 2 c. hot milk
- 3 Tbsp. butter or oleo
- 3 Tbsp. flour
- 1/2 c. chopped onion
- 4 chicken bouillon cubes
- 1 tsp. salt
- 1 beaten egg
- 1/4 to 1/2 c. grated Swiss or Colby cheese
Method
- Cook vegetables with water for 5 to 10 minutes.
- Drain.
- Save 2 cups of the vegetable water.
- Melt butter, stir in flour.
- Add onions and salt.
- Cook over medium heat 3 minutes, stirring constantly.
- Stir in 2 cups hot vegetable water, milk and bouillon cubes.
- Add vegetables and heat 20 to 30 minutes.
- Before serving, pour in beaten egg in a steady stream, stirring constantly. Garnish with cheese.
- Serves 4.
