Ingredients

  • 1 medium head broccoli or cauliflower (fresh or frozen)
  • 3 c. cold water
  • 2 c. hot milk
  • 3 Tbsp. butter or oleo
  • 3 Tbsp. flour
  • 1/2 c. chopped onion
  • 4 chicken bouillon cubes
  • 1 tsp. salt
  • 1 beaten egg
  • 1/4 to 1/2 c. grated Swiss or Colby cheese

Method

  • Cook vegetables with water for 5 to 10 minutes.
  • Drain.
  • Save 2 cups of the vegetable water.
  • Melt butter, stir in flour.
  • Add onions and salt.
  • Cook over medium heat 3 minutes, stirring constantly.
  • Stir in 2 cups hot vegetable water, milk and bouillon cubes.
  • Add vegetables and heat 20 to 30 minutes.
  • Before serving, pour in beaten egg in a steady stream, stirring constantly. Garnish with cheese.
  • Serves 4.
