Ingredients

  • 1 large head fresh broccoli, stems removed
  • 3 Tbsp. butter
  • 1/2 lb. fresh mushrooms, coarsely chopped
  • 1 c. mayonnaise
  • 8 Tbsp. butter, soft (1 stick)
  • 1 c. half and half
  • 2 eggs, beaten
  • 1 small onion, chopped
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 1/2 c. extra sharp grated Cheddar cheese
  • 2 c. finely crushed Ritz crackers

Method

  • Place broccoli in large saucepan with 1 inch of water.
  • Bring to a boil, cover and steam for 5 minutes.
  • Drain and chop coarsely. Heat 3 tablespoons butter in skillet, add mushrooms and saute for 5 minutes, stirring.
  • Preheat oven to 350°.
  • In large mixing bowl, combine 8 tablespoons butter, onion, mushrooms, half and half, salt, pepper, mayonnaise and eggs.
  • Mix all.
  • Add 1 cup cheese and 1 1/2 cups Ritz crackers.
  • Mix well and scrape mixture into baking dish.
  • Sprinkle remaining cheese and crackers on top.
  • Bake 30 to 40 minutes or until toothpick inserted in middle comes out clean. Let stand for 10 minutes.
