- 1 large head fresh broccoli, stems removed
- 3 Tbsp. butter
- 1/2 lb. fresh mushrooms, coarsely chopped
- 1 c. mayonnaise
- 8 Tbsp. butter, soft (1 stick)
- 1 c. half and half
- 2 eggs, beaten
- 1 small onion, chopped
- 1 tsp. salt
- 1 tsp. pepper
- 1 1/2 c. extra sharp grated Cheddar cheese
- 2 c. finely crushed Ritz crackers
Method
- Place broccoli in large saucepan with 1 inch of water.
- Bring to a boil, cover and steam for 5 minutes.
- Drain and chop coarsely. Heat 3 tablespoons butter in skillet, add mushrooms and saute for 5 minutes, stirring.
- Preheat oven to 350°.
- In large mixing bowl, combine 8 tablespoons butter, onion, mushrooms, half and half, salt, pepper, mayonnaise and eggs.
- Mix all.
- Add 1 cup cheese and 1 1/2 cups Ritz crackers.
- Mix well and scrape mixture into baking dish.
- Sprinkle remaining cheese and crackers on top.
- Bake 30 to 40 minutes or until toothpick inserted in middle comes out clean. Let stand for 10 minutes.
