Ingredients
- 2 lb. fresh or frozen broccoli
- 3 c. milk
- 3 c. chicken stock
- 1 c. chopped ham
- 2 tsp. salt
- 1/4 tsp. pepper
- 1 c. half and half
- 2 c. grated Swiss cheese
- 1/4 c. butter
Method
- Wash broccoli.
- Place broccoli and 1/2 stock in large kettle. Bring to a boil, reduce heat and cover.
- Simmer 7 minutes or until tender.
- Remove broccoli.
- Add the remaining stock, milk, salt, cheese and pepper.
- Bring to a boil over medium heat.
- Stir.
- Stir in cream, cheese, butter and broccoli.
- Heat until the cheese melts, but do not boil.
- To make thick, add 4 to 5 tablespoons cornstarch.
