Ingredients

  • 2 lb. fresh or frozen broccoli
  • 3 c. milk
  • 3 c. chicken stock
  • 1 c. chopped ham
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 1 c. half and half
  • 2 c. grated Swiss cheese
  • 1/4 c. butter

Method

  • Wash broccoli.
  • Place broccoli and 1/2 stock in large kettle. Bring to a boil, reduce heat and cover.
  • Simmer 7 minutes or until tender.
  • Remove broccoli.
  • Add the remaining stock, milk, salt, cheese and pepper.
  • Bring to a boil over medium heat.
  • Stir.
  • Stir in cream, cheese, butter and broccoli.
  • Heat until the cheese melts, but do not boil.
  • To make thick, add 4 to 5 tablespoons cornstarch.
