Ingredients

  • 1 pkt (10-ounce) frzn chooped broccoli
  • 3/4 c. Minced onion
  • 2 Tbsp. Butter
  • 4 lrg Large eggs, beaten
  • 2 c. Lowfat milk
  • 1 1/2 c. Grated sharp cheddar cheese
  • 1 c. Cooked rice
  • 1/4 c. Minced canned green chilie
  • 1 jar (2-ounce) pimentos, minced
  • 1 1/4 tsp Salt
  • 1/2 tsp Worcestershire sauce

Method

  • Preheat oven to 350 degrees.
  • Rinse broccoli with warm water to separate; drain well.
  • Saute/fry onion and broccoli in butter till onion is tender.
  • Combine with Large eggs and lowfat milk.
  • Stir in cheese, rice, chilies, pimentos, salt and Worcestershire sauce.
  • Turn into a greased 8-inch-square (2 quart) baking dish.
  • Set in shallow pan of warm water.
  • Bake about 40 min, till set in center.
