Ingredients
- 2 boxes Jiffy cornbread mix
- 8 oz. cottage cheese
- 1 small chopped onion
- 2/3 c. milk
- 4 eggs
- 1 box chopped frozen broccoli, thawed and drained
- 1 or 2 sticks margarine
Method
- Melt margarine in a 9 x 13-inch pan.
- Mix cornbread mix, eggs, milk and cottage cheese.
- Add broccoli and onion.
- Stir well. Pour melted margarine into mixture.
- Mix thoroughly.
- Pour mixture back into pan. Cook at 350° until toothpick comes out clean.
