Ingredients
- 1 medium onion
- 1 lb. broccoli (can use asparagus or cauliflower instead)
- 3/4 c. celery
- 3 potatoes
- 2 carrots, sliced
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 can chicken broth
- 1 qt. milk
- 2 to 4 Tbsp. cornstarch
- 1 c. shredded cheese
Method
- Chop vegetables and add to 1 can of chicken broth (2 to 3 cups).
- May use bouillon.
- Cook 20 to 30 minutes.
- Add 1 quart of milk and bring to a boil.
- Thicken with 2 to 4 tablespoons of cornstarch.
- Add cheese.
- Beat with spoon until melted.
- Do not boil.
