Ingredients
- 6 to 8 potatoes
- 3 onions
- 1 can Ro-Tel tomatoes and green chilies
- 2 lb. Velveeta cheese
- 10 oz. box chopped broccoli
- salt
- pepper
- garlic salt
Method
- Peel and cube potatoes; add chopped onions.
- Cover with water. Cook together for 20 to 25 minutes.
- Add Ro-Tel tomatoes, cheese, broccoli, salt and pepper to taste.
- Simmer over low heat until cheese melts.
- Serve with Broccoli Cornbread.
