Ingredients

  • 1 stick oleo
  • 1 large onion
  • 1 can cream of chicken soup, undiluted
  • 1 c. Minute rice, uncooked
  • 8 oz. Velveeta cheese, broken up
  • 1 bunch broccoli, cooked and drained (can use frozen broccoli)
  • 40 Ritz crackers (about 1 pkg.), rolled
  • 1 stick oleo, melted

Method

  • Saute 1 stick of oleo and onion until onion is tender.
  • Place cream of chicken soup, Minute rice, Velveeta cheese and broccoli in a greased casserole.
  • Add onion.
  • Pour 1 stick melted oleo over Ritz crackers and sprinkle on top of casserole.
  • Bake at 350° for 30 to 35 minutes.
