Ingredients
- 1 stick oleo
- 1 large onion
- 1 can cream of chicken soup, undiluted
- 1 c. Minute rice, uncooked
- 8 oz. Velveeta cheese, broken up
- 1 bunch broccoli, cooked and drained (can use frozen broccoli)
- 40 Ritz crackers (about 1 pkg.), rolled
- 1 stick oleo, melted
Method
- Saute 1 stick of oleo and onion until onion is tender.
- Place cream of chicken soup, Minute rice, Velveeta cheese and broccoli in a greased casserole.
- Add onion.
- Pour 1 stick melted oleo over Ritz crackers and sprinkle on top of casserole.
- Bake at 350° for 30 to 35 minutes.
