Ingredients

  • 2 large bags (4 boxes) frozen broccoli
  • 6 to 8 bacon strips
  • 1 can cream of onion soup (can substitute cream of mushroom)
  • 1 small (1 lb.) box Velveeta cheese
  • onion rings (approximately 16 to 20)

Method

  • Fry bacon strips until crispy.
  • Remove from grease and crush bacon into small pieces.
  • In a pan on the stove, cook the cream of onion soup.
  • Add crushed bacon pieces; gradually add Velveeta cheese.
  • Continuously stir on medium-low heat until Velveeta cheese has melted.
  • Cook broccoli as directed on package.
  • Drain water.
  • Place broccoli into a large casserole dish.
  • Pour mixture onto broccoli.
  • Cover with onion rings.
  • Preheat oven to 325°. Bake casserole for 30 minutes.
  • Serves approximately 8 to 10.
