Ingredients

  • 2 pkg. frozen broccoli or 1 bunch fresh
  • 1 large onion, chopped
  • salt and pepper to taste
  • 2 to 3 c. Italian bread crumbs
  • 1 c. mayo
  • 1 c. grated sharp Cheddar cheese
  • 2 eggs
  • 1 can cream of mushroom or cream of celery soup

Method

  • Chop broccoli and cook until just a little soft but still firm.
  • Mix together mayo, Cheddar cheese, eggs, soup, onion, salt, pepper and 1 cup Italian bread crumbs. Add broccoli.
  • Mix well. Pour in
  • a loaf pan or a casserole dish. Sprinkle Italian bread crumbs on top to suit.
  • Bake at 350° for 45 minutes.
