Ingredients

  • 1/2 c. vegetable oil
  • 1 lb Tasso ham, cubed
  • 1 c. minced onion
  • 3/4 c. minced red bell pepper
  • 1/2 c. minced green bell pepper
  • 1/2 c. minced celery
  • 1 Tbsp. chopped garlic
  • 1 c. flour
  • 8 c. chicken broth, heated
  • 2 c. heavy whipping cream
  • 1 lb cheddar cheese
  • 1 lb fresh broccoli cut into pcs
  • 2 tsp Cajun Seasoning
  • 1/2 tsp white pepper
  • 1/4 c. chopped parsley
  • 1/4 c. minced green onions

Method

  • Broccoli and cheese are a match made in Heaven.
  • Be careful not to overcook the broccoli, this will help to maintain its green color and allow it to stay crunchy.
  • Heat vegetable oil in a large saucepot over medium heat.
  • Add in tasso ham and cook for 5 min.
  • Be careful not to brown it.
  • Add in onion, red and green bell pepper, celery and garlic.
  • Cook for 5 min.
  • Add in flour and stir till a roux is formed.
  • Don't brown flour.
  • Then add in the heated chicken broth and whip till a light sauce is formed.
  • Simmer for 5 min.
  • Stir in heavy cream, cheddar cheese, broccoli, Creole seasoning and white pepper.
  • Cover and simmer for 10 min, stirring occasionally.
  • Add in parsley and green onions.
  • Divide into 6 large bowls and serve.
  • Yields 6 servings.
