Ingredients

  • 1 bunch broccoli, trimmed, stems peeled and cut into julienne strips
  • 1 head cauliflower, cut into flowerets
  • 4 Tbsp. butter or margarine
  • 1/2 c. fresh bread crumbs
  • 1/2 tsp. dried tarragon
  • salt and pepper to taste
  • dash of nutmeg
  • 2 Tbsp. pimento strips

Method

  • Plunge broccoli into boiling, salted water in vegetable steamer for 3 minutes.
  • Remove at once and place in colander. Repeat with cauliflower and place in colander with broccoli.
  • In a large skillet, melt butter until slightly brown (do not burn). Add bread crumbs and tarragon and cook 1 minute over medium heat. Toss in vegetables, seasonings and pimento.
  • Stir gently to coat vegetables and taste for seasoning, correcting if necessary.
  • Turn onto warmed platter or bowl.
