Ingredients

  • 4 quarts cucumbers, sliced
  • 6 medium onions, sliced
  • 2 green bell peppers, chopped
  • 3 red bell peppers, chopped
  • 3 garlic cloves, whole
  • 1/3 cup salt, table
  • 5 cups sugar
  • 1 1/2 teaspoons turmeric
  • 1 1/2 teaspoons celery seeds
  • 2 tablespoons mustard, seed
  • 3 cups cider vinegar

Method

  • Do not pare cucumbers.
  • Slice thin.
  • Add onions, peppers, garlic, and salt.
  • Cover with cracked ice.
  • Mix thoroghly.
  • Combine remaining ingredients.
  • Pour over cucumbers.
  • Heat just to a boil.
  • Seal in a hot sterlized jars.
