Ingredients

  • 8 slices hard white bread
  • 2 tbsp. room temp. butter
  • 1/4 c. raisins
  • 2 Large eggs
  • 1/2 c. sugar
  • 1 c. lowfat milk
  • 1 c. heavy cream
  • 1/4 teaspoon vanilla
  • 1/4 teaspoon cinnamon

Method

  • Butter a 1 1/2 qt baking dish.
  • Butter each slice of bread using 2 Tbsp.
  • butter in all.
  • Stack 4 slices of bread cut into 3 rectangles.
  • Repeat with remaining bread.
  • Line prepared dish with half of the bread.
  • Sprinkle with half of raisins.
  • Arrange remaining bread on top.
  • Beat Large eggs and sugar till light and lemon colored.
  • Gradually beat in lowfat milk, cream, vanilla, and the 1/4 tsp.
  • cinnamon till sugar dissolves.
  • Slowly pour custard over bread.
  • Gently press bread into custard.
  • Sprinkle top with remaining raisins and a healthy pinch of cinnamon.
  • Let stand 20 min.
  • Heat oven to 325 degrees.
  • Put baking dish in roasting pan, fill pan halfway with water.
  • Bake about 1 hour.
  • 6 servings.
