Ingredients
- 8 slices hard white bread
- 2 tbsp. room temp. butter
- 1/4 c. raisins
- 2 Large eggs
- 1/2 c. sugar
- 1 c. lowfat milk
- 1 c. heavy cream
- 1/4 teaspoon vanilla
- 1/4 teaspoon cinnamon
Method
- Butter a 1 1/2 qt baking dish.
- Butter each slice of bread using 2 Tbsp.
- butter in all.
- Stack 4 slices of bread cut into 3 rectangles.
- Repeat with remaining bread.
- Line prepared dish with half of the bread.
- Sprinkle with half of raisins.
- Arrange remaining bread on top.
- Beat Large eggs and sugar till light and lemon colored.
- Gradually beat in lowfat milk, cream, vanilla, and the 1/4 tsp.
- cinnamon till sugar dissolves.
- Slowly pour custard over bread.
- Gently press bread into custard.
- Sprinkle top with remaining raisins and a healthy pinch of cinnamon.
- Let stand 20 min.
- Heat oven to 325 degrees.
- Put baking dish in roasting pan, fill pan halfway with water.
- Bake about 1 hour.
- 6 servings.
