Ingredients

  • 4 c. cucumber, 1/8 inch slices
  • 1 c. onion, 1/8 inch slices
  • 1 garlic clove
  • 2 Tbsp. salt (medium coarse)
  • 14 to 18 ice cubes
  • 1 c. cider vinegar
  • 1 c. cider vinegar
  • 1 c. water
  • 1 1/4 tsp. mustard seed
  • 3/4 tsp. celery seed
  • 1/2 tsp. turmeric
  • 3 1/2 tsp. liquid artificial sweetener

Method

  • Combine cucumber, onion and garlic in large bowl.
  • Sprinkle with salt; cover with ice cubes.
  • Let stand overnight.
  • Drain well. Combine remaining ingredients except liquid artificial sweetener in a 4-quart pan; add cucumber mixture.
  • Bring to a boil.
  • Cover and boil gently for two minutes.
  • Stir in liquid artificial sweetener. Remove garlic clove.
  • Spoon into sterile jars.
  • Seal.
  • Yield:
  • 5 cups.
