Ingredients

  • 4 qt. sliced medium cucumbers
  • 2 green peppers, sliced
  • 1/3 c. granulated pickling salt
  • 1 1/2 tsp. turmeric
  • 2 Tbsp. mustard seed
  • 6 medium white onions, sliced
  • 3 cloves garlic
  • 5 c. sugar
  • 3 c. cider vinegar
  • 1 1/2 tsp. celery seed

Method

  • Combine cucumbers, onions, green peppers and whole garlic cloves.
  • Add salt.
  • Cover with chipped ice.
  • Mix.
  • Let stand for 3 hours.
  • Drain well.
  • Remove garlic.
  • Combine remaining ingredients.
  • Pour over cucumber mixture.
  • Bring to a boil for 6 minutes, then pack in jars and seal.
  • Makes 8 pints.
