Ingredients

  • 4 qts. sliced medium cucumbers
  • 2 green peppers chopped
  • 1/3 c. salt
  • 1 1/2 tsp. tumeric
  • 2 Tbsp. mustard seed
  • 6 med. white onions sliced (can use 4 small)
  • 3 cloves garlic (can omit)
  • 5 c. sugar
  • 1 1/2 tsp. celery seed
  • 3 c. cider vinegar

Method

  • Wash cucumbers and then slice.
  • Add onions, peppers and whole garlic cloves.
  • Add salt, cover with cracked ice and water.
  • Let stand at least 3 hours.
  • Drain and rinse thoroughly.
  • Combine remaining ingredients, pour over cucumber mixture.
  • Heat just to a boil.
  • Seal in hot sterilized jars.
  • Makes 8 pints.
