Ingredients
- 4 qts. sliced medium cucumbers
- 2 green peppers chopped
- 1/3 c. salt
- 1 1/2 tsp. tumeric
- 2 Tbsp. mustard seed
- 6 med. white onions sliced (can use 4 small)
- 3 cloves garlic (can omit)
- 5 c. sugar
- 1 1/2 tsp. celery seed
- 3 c. cider vinegar
Method
- Wash cucumbers and then slice.
- Add onions, peppers and whole garlic cloves.
- Add salt, cover with cracked ice and water.
- Let stand at least 3 hours.
- Drain and rinse thoroughly.
- Combine remaining ingredients, pour over cucumber mixture.
- Heat just to a boil.
- Seal in hot sterilized jars.
- Makes 8 pints.
