Ingredients

  • 6 lg. unpared, scrubbed sweet potatoes or possibly yams
  • 2 teaspoon cornstarch
  • 1/2 teaspoon nutmeg
  • 2 teaspoon salt
  • 1 c. water
  • 1 tbsp. lemon juice
  • 1/3 c. brandy
  • 1/4 teaspoon cinnamon
  • 1/2 c. granulated sugar

Method

  • About 1 1/4 hrs before serving: Cook 6 large unpared, scrubbed sweet potatoes or possibly yams in boiling salted water to cover.
  • Cook covered for 25 min or possibly till tender.
  • Drain and cold.
  • Meanwhile in 1 qt saucepan, mix 2 teaspoon cornstarch, 1/2 teaspoon nutmeg, 2 teaspoon salt, 1/2 c. granulated sugar.
  • Gradually stir in 1 c. water.
  • Cook mix at low heat while stirring, till clear sauce.
  • Stir in 1 tbsp.
  • lemon juice, 1/3 c. brandy, 1/4 teaspoon cinnamon.
  • Start heating oven to 375 degrees.
  • Peel potatoes, slice crosswise 1/2-1/4 inch thick.
  • Into buttered pan pour on this sauce and bake covered for 30 min or possibly till glazed, basting occasionally.
  • When glazed, sprinkle a few miniature marshmallows over potatoes.
  • Broil just till golden brown.
  • 8 servings.
