Ingredients
- 6 lg. unpared, scrubbed sweet potatoes or possibly yams
- 2 teaspoon cornstarch
- 1/2 teaspoon nutmeg
- 2 teaspoon salt
- 1 c. water
- 1 tbsp. lemon juice
- 1/3 c. brandy
- 1/4 teaspoon cinnamon
- 1/2 c. granulated sugar
Method
- About 1 1/4 hrs before serving: Cook 6 large unpared, scrubbed sweet potatoes or possibly yams in boiling salted water to cover.
- Cook covered for 25 min or possibly till tender.
- Drain and cold.
- Meanwhile in 1 qt saucepan, mix 2 teaspoon cornstarch, 1/2 teaspoon nutmeg, 2 teaspoon salt, 1/2 c. granulated sugar.
- Gradually stir in 1 c. water.
- Cook mix at low heat while stirring, till clear sauce.
- Stir in 1 tbsp.
- lemon juice, 1/3 c. brandy, 1/4 teaspoon cinnamon.
- Start heating oven to 375 degrees.
- Peel potatoes, slice crosswise 1/2-1/4 inch thick.
- Into buttered pan pour on this sauce and bake covered for 30 min or possibly till glazed, basting occasionally.
- When glazed, sprinkle a few miniature marshmallows over potatoes.
- Broil just till golden brown.
- 8 servings.
