Ingredients

  • 1 Tbsp. dry yeast
  • 1 1/4 c. lukewarm water
  • 1/2 tsp. salt
  • 1 Tbsp. honey
  • 1/2 c. buttermilk
  • 1/4 c. safflower oil
  • 1/2 c. wheat germ
  • 1/2 c. milk powder
  • 1 c. bran
  • 2 c. whole wheat flour
  • 1 1/2 c. unbleached flour (approximately)

Method

  • Mix all ingredients in bowl except unbleached flour.
  • Let it sit under cover for several hours.
  • Gradually add unbleached flour, kneading dough until it is smooth.
  • Let it rise for 2 hours.
  • Punch down, divide in 16 pieces.
  • Roll each and place on cookie sheet. Let rise 30 minutes.
  • Bake in 375° oven for 15 to 20 minutes.
