- 1 Tbsp. dry yeast
- 1 1/4 c. lukewarm water
- 1/2 tsp. salt
- 1 Tbsp. honey
- 1/2 c. buttermilk
- 1/4 c. safflower oil
- 1/2 c. wheat germ
- 1/2 c. milk powder
- 1 c. bran
- 2 c. whole wheat flour
- 1 1/2 c. unbleached flour (approximately)
Method
- Mix all ingredients in bowl except unbleached flour.
- Let it sit under cover for several hours.
- Gradually add unbleached flour, kneading dough until it is smooth.
- Let it rise for 2 hours.
- Punch down, divide in 16 pieces.
- Roll each and place on cookie sheet. Let rise 30 minutes.
- Bake in 375° oven for 15 to 20 minutes.
