Ingredients

  • 1 pound chicken cubed
  • 1 onion small, chopped
  • 1 clove garlic
  • 1 tablespoon olive oil
  • 14 ounces chicken broth
  • 15 1/2 ounces great northern beans drained
  • 4 1/2 ounces green chilies drained
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon black pepper
  • 1/8 teaspoon red pepper
  • 1 cup sour cream
  • 1/2 cup heavy whipping cream
  • 1 cup shredded cheddar cheese for garnish

Method

  • In heavy saucepan, saute chicken, onion, and garlic in olive oil.
  • When chicken is cooked, add broth, beans, chilies, and seasonings.
  • Simmer on low heat for 20 minutes. Remove from heat and add sour cream and whipping cream.
  • Top with shredded cheddar cheese.
