Ingredients
- 1 c. 100% bran
- 1 c. boiling water
- 1 1/2 c. sugar
- 1/2 c. salad oil
- 2 eggs
- 2 c. buttermilk *
- 2 1/2 c. flour
- 1/2 tsp. salt
- 2 1/2 tsp. baking soda
- 2 c. Kellogg's All-Bran
- 1/2 c. white raisins
Method
- While mixing other ingredients, soak 1 cup of 100% bran in 1 cup of boiling water.
- Mix sugar, oil, eggs and buttermilk.
- Sift flour, salt and baking soda together and add to the buttermilk mixture.
- Add to this the soaked bran, 2 cups Kellogg's All-Bran and the raisins.
- Bake in well-greased and floured muffin tin. Bake at 400°
- for 15 to 20 minutes.
- Batter will keep 3 weeks in refrigerator.
- Fill tins about 3/4 full.
- Makes 36 muffins.
