Ingredients

  • 1 c. 100% bran
  • 1 c. boiling water
  • 1 1/2 c. sugar
  • 1/2 c. salad oil
  • 2 eggs
  • 2 c. buttermilk *
  • 2 1/2 c. flour
  • 1/2 tsp. salt
  • 2 1/2 tsp. baking soda
  • 2 c. Kellogg's All-Bran
  • 1/2 c. white raisins

Method

  • While mixing other ingredients, soak 1 cup of 100% bran in 1 cup of boiling water.
  • Mix sugar, oil, eggs and buttermilk.
  • Sift flour, salt and baking soda together and add to the buttermilk mixture.
  • Add to this the soaked bran, 2 cups Kellogg's All-Bran and the raisins.
  • Bake in well-greased and floured muffin tin. Bake at 400°
  • for 15 to 20 minutes.
  • Batter will keep 3 weeks in refrigerator.
  • Fill tins about 3/4 full.
  • Makes 36 muffins.
