Ingredients

  • 1/2 cup olive oil
  • 1/2 stick butter
  • 5 garlic cloves minced
  • 5 plum tomatoes skinned
  • canned tomatoes cut up, or substitute
  • 13 3/4 ounces chicken broth
  • 1/4 cup white cooking wine
  • 6 fresh basil leaves cut in strips or 1/2 tsp. dry
  • pepper to taste
  • 1 head broccoli cut into florets
  • 3/4 pound bowtie pasta
  • 1/2 cup grated Parmesan cheese plus additional for garnish

Method

  • In large pan, heat the oil and butter and lightly brown the garlic cloves. Add tomatoes, chicken broth, wine, basil and pepper. Cook over medium heat for 10 minutes. Add broccoli, cover pan and cook over medium heat another 10 minutes.
  • Meanwhile, cook pasta according to package directions and drain. Place pasta in large serving bowl and toss with broccoli mixture and 1/2 cup of Parmesan cheese. Serve with additional grated Parmesan cheese and pepper. Preparation time: 15 minutes. Serves: 4.
