Ingredients

  • 8 eggs, separated
  • 1 lb butter
  • 13 cup Bourbon
  • 3 cups sugar
  • 3 cups flour
  • 2 teaspoons vanilla extract
  • 2 teaspoons almond extract
  • 1 cup pecans, chopped

Method

  • Whip egg whites until stiff.
  • Add 1 cup sugar: set aside.
  • Cream butter and rest of sugar until light yellow.
  • Add egg yolks one at a time.
  • Alternately add flour, bourbon, vanilla and almond extracts.
  • Beat well.
  • Stir in nuts.
  • Fold in egg whites until smooth.
  • Divide batter into 3 greased loaf pans.
  • Bake at 325 for 1 - 1 1/2 hours until done.
  • Freezes well.
