Ingredients

  • 1 (14 1/2 ounce) can beets, sliced and drained (if using canned or cook 1 large beet)
  • 1 1/2 lbs ground beef
  • 1/2 cup fresh parsley plus 1 tbsp fresh parsley, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons Worcestershire sauce
  • salt & freshly ground black pepper
  • 1 tablespoon extra virgin olive oil
  • 3 ounces goat cheese or 3 ounces cream cheese
  • 1/2 1/2 cup creme fraiche or 1/2 cup Greek yogurt
  • 1 tablespoon fresh thyme, chopped or 1 teaspoon dried thyme
  • 1 tablespoon fresh dill, chopped or 1 teaspoon dried dill
  • 1 teaspoon lemon zest
  • 4 crusty rolls, split
  • red onion, slices
  • red leaf lettuce

Method

  • In a large bowl, combine the ground beef, 1/3 cup parsley, garlic, and Worcestershire sauce; form into 4 patties.
  • Heat a skillet over medium high heat; season patties with salt and pepper and cook, in skillet, for 6 to 8 minutes, turning once.
  • Meanwhile, crumble goat cheese into a bowl; stir in sour cream, thyme, dill, lemon zest, and 1 tablespoon parsley.
  • Place cooked beef patty on bottom bun, top with beet slices, goat cheese mixture, red onion slice, lettuce, then roll top.
