Ingredients

  • 6 medium-sized bok choy
  • 2 tbsp fermented black beans
  • extra virgin olive oil
  • 2 minced garlic cloves
  • 1 tspn minced ginger
  • dash of mirin
  • 2 tbsp dark soy
  • 1/2 cup sliced barbecued pork
  • 1/4 cup finely sliced spring onion
  • ground white pepper

Method

Trim and wash 6 medium-sized bok choy and cut each into quarters. Rinse 2 tbsp fermented black beans in a strainer under cold water for a minute. Heat some extra virgin olive oil in a wok until it begins to smoke and add the bok choy, 2 minced garlic cloves and a tspn minced ginger. Keep the flame high and keep the bok choy moving in the wok for 2 minutes. Add the black beans, a dash of mirin and 2 tbsp dark soy. Stir or move the wok so everything is mixed well. Add 1/2 cup sliced barbecued pork and 1/4 cup finely sliced spring onion. Take off the heat, add ground white pepper to taste and serve.
