Ingredients
- 2/3 c. shortening
- 2 c. raisins
- 1/2 teaspoon salt
- 1 c. sugar
- 1 tbsp. cocoa
- 2 1/2 c. water
- 3 c. flour
- 2 teaspoon baking pwdr
- 1 teaspoon soda
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1 c. nuts, minced; optional
Method
- In saucepan combine shortening, raisins, salt, sugar, cocoa and water.
- Boil 10 min; cold.
- Sift dry ingredients and add in to raisin mix.
- Stir in nuts, if you like.
- Blend well.
- Pour batter into one greased and lightly floured 9 x 4 inch loaf tin plus one 5 inch baking dish.
- Bake at 350 degrees for 50 min or possibly till cake tests done.
- NOTE: There are no Large eggs in this recipe.
