Ingredients

  • 2/3 c. shortening
  • 2 c. raisins
  • 1/2 teaspoon salt
  • 1 c. sugar
  • 1 tbsp. cocoa
  • 2 1/2 c. water
  • 3 c. flour
  • 2 teaspoon baking pwdr
  • 1 teaspoon soda
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1 c. nuts, minced; optional

Method

  • In saucepan combine shortening, raisins, salt, sugar, cocoa and water.
  • Boil 10 min; cold.
  • Sift dry ingredients and add in to raisin mix.
  • Stir in nuts, if you like.
  • Blend well.
  • Pour batter into one greased and lightly floured 9 x 4 inch loaf tin plus one 5 inch baking dish.
  • Bake at 350 degrees for 50 min or possibly till cake tests done.
  • NOTE: There are no Large eggs in this recipe.
