Ingredients

  • 2 c. flour
  • 1 c. quick cooking oats (uncooked)
  • 1/2 c. sugar
  • 1/2 Tbsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. ground cinnamon
  • 1/4 c. plus 2 Tbsp. margarine, softened
  • 2 eggs, slightly beaten
  • 1/4 c. light corn syrup
  • 1 c. fresh berries

Method

  • Combine first 7 ingredients in a large mixing bowl.
  • Cut in margarine with pastry cutter until mixture resembles coarse meal. Combine eggs, milk and corn syrup; mix well.
  • Add to the dry ingredients, stirring just until moistened.
  • Fold in blueberries. Pour batter into greased and floured 9 x 5 x 3-inch loaf pan.
  • Bake at 350° for 1 hour and 10 minutes, or until a wooden pick inserted in center comes out clean.
  • Cool loaf in pan 10 minutes.
  • Remove from pan and cool completely on a wire rack.
  • Yields 1 loaf.
